Cocktail Spotlight: del Alma Negroni

del Alma Negroni

  • 1.5 oz. Novo Fogo Aged Cachaca
  • .5oz. Campari
  • .5oz. Cochi Americano Rossa
  • .5oz. Acha Vermouth
  • Orange Twist

This is our twist on the classic Negroni. A cocktail of some fame, the Negroni has it’s share of fans, so while we don’t want to use the word “better”, we feel this is a cocktail that’s more approachable because it’s a bit more balanced.

We’ve replaced the gin with Novo Fogo Aged Cachaca which adds an extra layer of sweetness. The Cochi Americano Rossa adds a touch more flavor throughout the taste of the cocktail where the bitterness on the back end of the Campari usually hits hard and lingers. These modifications keep the bitterness of the Campari from overpowering the cocktail. We understand that this flavor is what makes a Negroni, and many people love it, but it’s not for everyone. Ultimately, the Campari’s bitterness hits late and cuts the sweetness of the liqueurs, making for a nice finish to the beverage.

If you’ve tried a Negroni in the past and didn’t like the bitterness, or if you’ve been wanting to try one, we highly recommend you get started on the del Alma Negroni. A nice balanced cocktail with a South American/Spanish flair.

Cocktail Spotlight: Piña del Fuego

  • 1.5 oz Pueblo Viejo Reposado Tequila
  • 1.5 oz House-Smoked Pineapple Juice
  • .5 oz Gran Marnier
  • Citrus
  • Splash of Simple Syrup
  • Jalapeno
  • Lime zest/Salt Rim

This time we’re featuring cocktail that’s been on the menu for awhile, the Piña del Fuego.

On par in spiciness with a del Alma favorite, the Sergeant Pepper, this drink has a nice spicy and sweet flavor from the jalapeno/pineapple juice combination. While it may not be for people with an aversion to spicy foods, the drink is well-balanced and doesn’t overpower with either sweetness or spiciness.

With housemade smoked pineapple juice and lime zest salt rim, you’re not likely to find this cocktail anywhere else.

Cocktail Spotlight: Café Olé

Café Olé

  • 1.5 oz. Pueblo Viejo Blanco Tequila
  • 1.5 oz. Pastega Cold Brew Coffee
  • .5 oz Turbinado sugar syrup
  • 1 dash Bitterman’s Xocolatl Mole Bitters

This month’s spotlight, and the newest cocktail on the del Alma menu, is the Café Olé. A perfect beverage for those who are looking for a nicely balanced chilled coffee cocktail.

The cold brew coffee offers a slight sweetness, and less acid to the cocktail that allows the flavor of the coffee to come through without the standard bitterness overpowering the other flavors. The Xocolatl Mole bitters by Bitterman’s adds a bit of cocoa, cinnamon and spices that makes this cocktail more than the sum of it’s parts. Cocktail Spotlight: Pink Unicorn

Pink Unicorn

  • Pink peppercorn infused rum
  • Housemade honey vanilla infused syrup
  • Locally grown strawberry puree
  • Fresh citrus
  • Club soda
  • Tiny plastic unicorn (optional)

We take a single pink peppercorn (hence the name) and infuse our rum with a unique flavor to start off this original cocktail. Our housemade honey and vanilla infused syrup and strawberry puree made from locally grown fruit gives you a fresh, summer flavor. While this cocktail might sound a bit on the sweet side at first glance, the club soda and citrus make for an excellently balanced, refreshing summer beverage perfect for the end of your workday or weekend.

This seasonal cocktail is a summertime favorite at del Alma, and will only be on the menu while we still have access to the fresh strawberries from the local growers that the season affords us.

Cocktail Spotlight: Spanish Martini

Spanish Martini

Spanish Martini

  • Mahon gin
  • Fino Sherry
  • Manuel Acha non-dry white vermouth
  • Splash of orange
  • Chorizo and piquillo pepper stuffed olive

This twist on the classic martini features Mahon gin, one of the only gins in the world to have it’s own appellation, or geographic designation. (The other of note being England’s Plymouth gin, which recently lost it’s geographic designation). Mahon gin is produced on the island of Menorca, Spain and is made with imported juniper berries and grape alcohol rather than the traditional grain found in most gins. The Spanish martini also features a Spanish fino sherry and Manuel Acha non-dry white vermouth, also from Spain (http://demaisonselections.com/achavermouthwhite.html).

With a splash of orange bitters and garnished with some house made chorizo and piquillo pepper hand-stuffed green olives, this is a nicely balanced, easy to drink martini that features some amazing Spanish liquor and liqueurs.
