At del Alma, Chef Conor Claffey-Koller has created a menu combining the flavors and cuisine of Latin America, Spain and the Caribbean with Pacific Northwest faire. Taking advantage of the many local markets, ranches, and farms in Oregon, he creates an evolving menu that is true to each dish’s culinary roots while incorporating local flavors and modern presentations.
