Fresh guacamole with house-cured bacon, chipotles, hazelnuts, fresh chips

Salmon and Rajas Flautas
Flour tortillas rolled with roasted salmon, smoked tomato-poblano rajas, and crema, served with ancho broth, pea greens, and compressed apple salad

Second Course

Cochinita Pibil
Yucatán style BBQ pork served with black bean purée, cotija, pickled red onions, guacamole, and warm flour tortillas

Prawn Tacos
Three-chile prawn tacos with guacamole, mojo-napa cabbage slaw, chipotle remoulade, and pineapple, chile de arbol, sesame salsa, served with black beans and achiote rice

Black Bean and Wild Mushroom Enchiladas
Mushrooms, black beans, and queso botanero rolled in corn tortillas, served with mojo-napa slaw, cotija, salsa ranchera

Third Course

Garnished with hazelnut cookie crumble and Chantilly cream

Toasted coconut, graham cracker crust, coconut gelée, candied lime zest

Toasted coconut truffles with chocolate praline, avocado mousse, cocoa nibs, passion fruit curd,spiced hazelnuts, and Chantilly cream
